How do I prepare bird's nest?
Soak in room-temperature water for 30–60 minutes until softened, gently pick out any fine feathers, then drain. Double-boil for 20–30 minutes and sweeten with rock sugar to taste.
How much water should I add? A simple rule: the nest and the water together should add up to about 25× the dry weight. So for every 10g of dry bird's nest, you want 250g (250ml) total in the bowl before boiling. The easiest way:

- Weigh your dry nest before soaking (e.g. 10g).
- After soaking, drain it and weigh the soaked nest.
- Add water until soaked nest + water = 250g (for 10g dry). Example: if the soaked nest weighs 70g, add 180ml of water (70 + 180 = 250).
- Double-boil as above — and that's it!
How long should I soak each grade?
Soak times vary by shape:
- Whole cups (A1, WSTY-, WST-*, WCRY): 1–2 hours
- Strips (ZTB-*, ST1-*, ST2-*): 30–45 minutes
- Edge: 3–4 hours or more, as it's firmer
How do I store it?
Dry bird's nest keeps for a long time in an airtight container in a cool, dry place away from sunlight. Once cooked, refrigerate and enjoy within 3–5 days.
